Brian,
I have a bluetooth-enabled GPS unit that I can "borrow" from work if you'd like
to see one the next time I see you. It cost us about $140 and is about 6 studs
wide by 8 studs long and about 2 bricks tall. With the bluetooth adapter it is
about another brick taller. Accuracy varies but you can count on 4 to 5 feet
almost all the time. Very nice. Not knowing much about bluetooth (I guess I'm
going to have to learn) I can't tell you much about that side of the
communication, but almost all GPS units send standard NMEA data strings. They
are simple comma-separated data strings reporting latitude, longitude, UTC time,
speed, heading, along with several other bits of information. Depending on the
GPS unit they will be sent anywhere from 10 times a second to 1 per second.
This is the specific unit I'm playing with right now.

They are very compact and lightweight. It even has a built-in SD card reader,
but I think that is only available when the unit is used in compact flash mode.
When I heard bluetooth in the NXT this is absolutely the very first thing I
thought of.
