Good to hear from you.  A panel could be as simple as coming in and talking
about what it is like to build LEGOs like you all do.  What it takes and why
you like it.  The panel could be an opportunity to come in and build
something and let people watch.  It could be an opportunity to promote your
group to our attendees and see if anyone wants to join as well.

You also mentioned a secure display area.  Is there a place we could set up
a display and leave it up/staff it for the duration of the convention?  What
kind of space (sizewise) would we be talking about?

Most SF (1) conventions have art shows, and often have other displays up in the
same room. You can count on pretty good security for them, among the art
displayed will be originals for book covers (with prices in the thousands of
dollars). They will probably be happy to give you a table or even two for a
display.

Some places may also have lockable display cabinets.

(1) Note that if it's a serious fan convention, they may prefer you to call it
an SF convention. Sci-Fi conventions are things like Star Trek media
conventions.
