John,
I think you missed the boat on this one. Although Shrek would have stayed human
to make life easier for Fiona, she didn't want him to because she knew that
being an ogre is what makes him who he is and who she fell in love with.
Furthermore, Fiona realizes that she is happier being herself (also an ogre) by
not trying to please her parents and those around her by pretending she is
something else. This idea is underlined a third time when it is revealed that
Shrek's father-in-law once was also a creature who chose (wrongly, as it bound
his fate to the fairy god-mother) to become human. So, I would suggest that one
of the major themes in Shrek is to be who you are and NOT to change to appease
those around you.
