The second example is: If a set number of angels can dance on the stud of a
melting Lego brick at any determined temperature, would God know that number
in advance?

I prefer to think of predestination to be something of a calling in the
pre-existance. That is, you've been tapped for some task or fate, but it's
up to you to meet it. I bet that the idea that our actions are already
determined and that no decisions on our part can change them is an old
holdover from the ancient Greek (and likely other) religions.
Does this mean that God is caught by surprise all the time? Probably, but
then probably not. He can see into our hearts and our minds, and He has
determined what we're capable of. But consider: He's saddened a lot in the
Scriptures, yet He's also overjoyed a lot, too. I would think that this
indicates a lot of free will at work. He certainly has a plan for this
world (would you create one without a purpose?), and I wouldn't be surprised
if it were written down, it'd have quite a lot of "plan B's".
Cheers,
