What's that style of hat/cap called?

a "kepi"

When referring to the element, would it be more correct to call it a
"Kepi Cap" or a "Kepi Hat"?  (I realize that it might be most correct
simply to call it a "Kepi"[1] but I figure the redundancy can't hurt.
Leaning toward "Kepi Cap" at the moment, since "cap" is what the dictionary
calls it.)

Correct terminology for this style of hat is a "kepi" or a "Slouch Cap/Hat"
<Encyclopedia Mode> OT, This style of headgear has it's origins in France,
having migrated to the USA in the early 19th century (just around 1830-40) and
were first "officially" used By the United States Military in the Mexican
War.  Another aside, These hats and the uniforms that were worn with them were
the first occurance of "Standard Sizes" (IE. Small, Medium, Large ETC.)  This
was because of the need for fast equiptment, rather than tailoring the clothes
to each individual soldier, they made standards that were followed by all of
the army contractors. </Encyclopedia Mode>

Sorry, I can't resist American Civil War History, one of my favorites.

[1] David Farrigut, don't even ask about the Torpedos!

(I love the gray ones)

Me too!  Hmm, I wonder if these will show up in the Star Wars line for the
Imperial officers...
