Hmmm. That I own? Probably 6090 Royal Knight's Castle, although some smaller
ones are pretty nice, too.
That I don't? Definitely 6086, Black Knight's Castle.

Princess Storm kinda kicks booty, but you just can't beat the Black Knight (as
seen in 6009 Black Knight).
Non-Castle, Darth Vader is pretty cool.

Err, I did once build a really big castle from all my Lego when I was young.
It was both large and intricate, although I have no pictures or anything, so
you'll have to take my word on it. I will say that while originally the walls
were solid red, this kinda fell by the wayside when I ran out of red bricks.

If you mean taking a knife or paint to them, no. I've only done this once and
I probably won't again, if I can help it.
