Welcome! I'm headed in the opposite direction. I've been solely a Castle
builder for years, and lately I've been branching out into building spaceships
too.

Like someone else mentioned in this thread, <set:6097> really isn't that bad
for parts, and you can still find them in clearance sales. I own two of them,
and I didn't pay over $40 for either one. Fright Knight soldiers looked good,
although I didn't like the faces. I like some of the architectural elements in
the new sets, and the minifigs are nice, though the sets are badly overpriced
and don't give you a lot of basic building parts. Wait to get the new sets on
sale. The Royal Knights sets from 1995 were probably the best recent Castle
sets for building elements.
Another thing you can try when you're starting out is to get lots of basic
building buckets and build castles in different colors. Not all castles have
to be gray or black. Look at the classic yellow castle (<set:375>), Daniel
Siskind's red castle (http://www.brickmania.com/gallery_castle.html), and Ed
Boxer's white castles (http://www.geocities.com/WestHollywood/9172/lego.html)
for examples of using different colors that are more readily available. I
think there was a discussion about using different brick colors in this group a
few months ago.

There are still some nice building elements in them, even if you don't use the
oriental trim elements. I like the Flying Ninja Fortress <set:6093> (easy to
find on sale these days) for the sloped "stone wall" pieces, and I think you
can put smiley faces and different helmets on the soldiers to make a
western-looking army.

I actually use 1xn for almost everything and only use 2xn where I need a more
solid structure. But some of that is out of necessity... I have a lot more 1xn
bricks than 2xn ones. :)
Arch bricks are also very useful to get for building larger structures.
They're not just decorative... you can use them as fuctional structure elements
to open up the interiors of your buildings just like real castle builders did.
Maybe someday arches will be among the bulk brick offerings from LEGO.
