This actually was developed during the Dark Ages by the Byzantines (Romans
to themselves, Greeks to everyone else) and being perhaps the most closely
and successfully guarded military secret of all time, was lost with the fall
of the Byzantine empire long after the close of the Dark Ages.
Though clearly everyone saw the potential of cannon, they weren't
particularly effective on board ships though the middle ages (one can pick
different ending dates on where you are in the world, but roughly 1500 for
Europe). Greek Fire was a much nastier weapon - perhaps it's just as well
that it was lost. :-)
Massed bowfire was the projectile of choice during most of the middle ages.
