A story height of 6-7 bricks, not counting the plate or baseplate that
serves as the roof [all of my multi-story buildings are constructed so that
each floor is detachable, except the base, is detachable, allowing access to
the inside] is the typical height that I use. Looking back, I think the
reason behind it is a combination of both common sense and LEGO's
influences. 6-7...the difference depends more on factors such as supports,
interior design, and type of windows than anything else. That's my typical
height. In fact I'm working on a cruise ship right now, and the typical
height for each level is 6.
Atypical height, though, is my favorite. ;-) I try to have most of the
rooms/stories to be average height, and then really break the rules with a
ballroom or something.

| (...) Thanks for the input, everyone. I definitely seems that 6-7 is the norm, officially and unofficially. Unfortunately, that means I have to some serious thinking about my original plan, which was 9-10. I was just using 10 (including floor (...) (24 years ago, 19-Jun-00, to lugnet.build)
