I do like the beak of that ship and the general lines.  Very
nicely done.  But it does look like it needs windows in that
sterncastle, admittedly not easy given the colours of window
  available...

Well green windows might be hard to find, but perhaps I could use black 1x4
arch to simpulate them, just no glass (or shutters).  Good Idea.  This is my
first time making a pirate MOC so definitly room to improve.

"Simpulate?" That's one I will *definitely* have to add to my
lexicon.  (Or was that unintentional?  If so, it's still brilliant.)

Green window frames are hard to find, save on 6280 (1 per, I think?),
   but a lot of the pirate ships have used 1x4x3 windows with shutters;
the green lattice inside shutters are the most common sort, IIRC,
and for the outer shutters green is common as dirt.  If you don't
mind having square windows, it might be a prospect.  It would also
give you a place from which to have a little sneak shoot a musket.

The last pair of cannon, I noticed, aren't on swivels.  Any
  story behind that?

Actually I made this ship in the first place for Evil Stevie's pirate game, so
since this was a the size of a lev6 ship, I needed(wanted) 6 cannons.  Space
constraints made it easier to just to bolt those ones to the deck (so to
speak).  Inside the cabin I felt it would be difficult to be moving the cannons around so I didn't bother.  I was right too, putting just that
one guy in the back was kinda a chore.

I see now that the swivel just wouldn't have done the trick on
that last pair--and yeah, moving guys around in the Pirate Game
is a hassle.  Remember, if you accidentally drop him into the
   water, there he stays...!

Now all you need are those sails.  I'll look forward to seeing
   the pictures here!
