From looking at the data sheets, it's going to be a bit more of a project
than just "hooking it up". At a minimum you'll need to have a small micro
to decode the dual PWM outputs, and they (AD) have a data sheet describing
the use of a Parallax Basic Stamp. There will be a lot of algorithm
development to turn the acceleration data into something useful, like say
inertial navigation, and you'd eventually need a gyro to deal with rotation
in the x-y plane. It would be an interesting project.
