OK, Ive already found part of the answer (shortly after posting, of course...).
It appears that the nbc executable is both the NBC and the NXC compiler. I
still cant find any documentation for how to use it, but if you invoke it with
a -help option it will print a brief summary.
So I tried ./nbc test.nxc (where test.nxc is a simple NXC program), and it
chugged for a while, but didnt create any output file I could find. So I added
the -O option: ./nbc test.nxc -O=test.bin (not sure what extension would be
standard for a compiled NXC program, so I just made one up). This chugged for a
while and generated a test.bin file.
OK, so it appears that Im compiling NXC code, but Im still stumped as to how I
would get this onto my NXT. None of the options listed by -help seem to relate
to communications with the brick, and my google-fu is not strong enough to
produce the answer I seek. I need a wink or a nudge.

| OK, NXC sounds great, but I can't for the life of me figure out where to obtain it, or how I would use it once I had it. Note that I'm on Mac OS X, so (for example) the tutorial by Daniele Benedettelli doesn't do me any good, since it only describes (...) (17 years ago, 29-Aug-07, to lugnet.robotics.nxt)
