Easiest way to add two more input and output compares?

Well, I have ny Handyboard running a little lawnmower around, but I can
only feasibly get two PWM signals in for processing and relaying on to the
motor drivers.  I need two more signals (drive and steering, all I'm
doing now is camera pan/tilt) to be processed (like limiting
acceleration on the drive wheels, which seem to go from zero to all-out
with a small touch of the joystick, wearing out the plastic wheels).

I've added some expansion area to the Handyboard, so what is the cheapest,
easiest way for the handyboard to aquire another IC/OC pair.  Trouble is
I need to compute some rudimentary signal processing on whatever I add, or
else I'll have to communicate with the Handyboard, which I'd like to
avoid.  I anticipate something like a PIC or a Stamp might do.  Any
ideas?  These would operate independently of the handyboard, receiving RC
commands, processing them in assembler, and sending the processed
output commands.

All in all, a great board, I've put it through some harsh shakey, dirty,
hot environments, and no troubles so far!  Knock on wood.

Thanks, gurus.
