I would say the track should be at least 5 feet wide.
The fun-nest tracks, especially for first time racers are wide and
simple. If you make them complicated people just get frustrated. The
enjoyment really comes when you can get a good flow going around the
track.
After people get the flow of the track people start make competitive
passes, rather then I passed you because you crashed into something.
This is when it gets exciting to watch because skill becomes more of a
factor then luck.
Additionally I would run all three cars at once. More cars racing, is
way more fun.
Have periods where people can test their cars, and the rest of the time
race in groups of three.
The other thing you need is corner marshals. These are usually the
drivers from the previous heat. Keeping the track simple will mean you
need fewer of them. Their job is to separate cars that have collided,
right a car that's tipped over, or put a car back on the track if its
jumped a barrier.
Then of course you need someone to count laps.

| (...) Uhhh...hhh.... what Derek said :) 5-foot wide is good. I think that 3 cars at once is a MUST. More fun, more crashes. How many laps per race? 5? 10?
