Does anyone have any recommendations as to which program to use for
virtual LEGO model building?
Are any of them easier to use for newbies?
Also, do any of the programs have a larger database of parts?

| Well, if you are a Mac user, theer are not many choices. 8( You can use POV-RAY, which produces good results, and has a wide array of parts available, but is not terribly intuitive. You can also run mlcad on a Mac, provided you have RealPC and a Mac (...) (25 years ago, 16-Apr-00, to lugnet.cad, lugnet.general)
