Well here's my usual plan of attack
remove everything that is held on by only 1 or 2 studs. Things like tables and
antennas come to mind. The next thing you'll need to do is add some basic bricks
in or around the model to make it more stable. This could be as simple as a
column of 2x2 bricks in the middle of the model to support the roof or other
things. The next thing I do is find a box that is slightly larger and pack the
model so it floats in the middle with paper or possibly a towel or
two. Finally take anything your afraid will brake as carry on luggage. This will
make sure it's not rattled around with the other luggage or dropped.
Oh, it may be a good idea to take several pictures of the models for reference
just in case. Its never really happened to me using the method described above
but stuff happens.
Good luck.
