You may be able to get away with a small self tapping screw instead of a
screw extractor... drill a hole, screw in the screw (gently) and pull hard
on the screw.

Definitely. Also, for this sort of drilling, you should be using a Dremel or
similar power tool, or a pin vice.

You could always try drilling it out to standard peg size. If you go a bit
oversize, you can always add a shim of paper when you re-use the head.
