Jason - A LEGO Zoo is something I've been thinking about a lot lately too.
Primarily because I really want to build a Monkey House and I figure if I do
that then I have to have some other animal attractions to go with it*.
Besides the primates the two animal "environments" I thought would be really
cool to do would be a Polar Bear setting and an Alligator Pond. Like you,
I'm interested in using the animals that LEGO has already provided. I'll
definitely be interested in seeing what you come up with.
I've been prepping for my Monkey House for a few months. I've bought a
bunch of the large castle barred gates to use as the bars for the cage. I
also found that the Shell promo sets 1254 (Convenience Mart) have 2 bananas
in them so I got two copies (want more) so that my monkeys can have
something to eat. I was waiting for BrickFest to be over so that I could
tear down my Brick House of Horrors which has most of my grey bricks tied
up. My Monkey House is going to be a nice cinder-blocky, institutional grey
building.
Thanks to Jason and everyone else who chipped in the information on the
available Animals. It's good to have a complete list to refer to.

*On the other hand, in thinking about the town/train display that RichLUG is
slowly starting to work towards I've also thought that it would be fun to
just have a Monkey House by itself smack dab in the middle of downtown
Brickmond.
