Yeah, I don't think springs would work. Because of the scale involved, simpler
is often better. Maybe you could make the dispensing mechanism like some sort
of revolving door turned on its side? That was my other idea.

Your ASCII art was fine. I can picture it. I also have a soda fountain in my
pizza restaurant which looks a lot like yours only mine is 3 wide cuz the soda
area is small.
For another detail, add a CO2 cylinder: trying putting in a 2x2 dome piece
with an attached 2x2 cylinder with taps and tubes running to the dispenser -
it'll make it look even more like an authentic version. I stuck some barrels
around inside my restaurant too to help it look "stocked".
