Yep, two are very useful in certain situation.

I find that with most larger plates, a little working at one end will
get it lifted up enough that a fingernail can get under and pull the
whole plate off. If I need to work it more, I just work my way down,
prising a little bit every several studs.
I have definitely had situations where I've damaged studs while trying
to separate pieces.
