Interiors are strictly optional.  If you have a building with lots of
visibility into the interior, having some 'stuff' in there will add some
interest and some 'wow' factor.  I'd guess about half the buildings you see
on the train layouts have detailed interiors.  For the GMLTC, it usually
comes down to how rushed we are before a show!  <grin>

Most of the buildings you see have been 'selectively compressed'.  Try to
get the feel for the building rather than trying to make an exact copy.
We've built several buildings that would be way too small compared to 'real
life', but people enjoy them because they *look* like buildings.  As for
mini-fig scale, just do whatever feels right.  Some people say a mini-fig
'floor' would be 10 bricks tall, some go 8, some go 15 - there really aren't
any rules when building with LEGO.  As long as you and your kids are having
fun, that's all that really matters!

And don't be intimidated if your first attempts don't look perfect.  It's
LEGO - it comes apart!  You'll find that the more you build, the better
you'll do.  And yes, we want to see pictures someday!  :-)
