I can think of a few things--
1. Various pieces have hollow studs on top. The obvious example being
technic beams, but other things too. You can place these 1/2 stud off when
placed underneath 1x bricks-- although note that the 1x brick must be longer
than the hollow-stud piece.
2. Attach studs to the tube holes in any 2x brick/plate. This is a lot more
useful since it applies to more pieces, although it does give the result of
having an offset front-to-back as well as side to side
3. Similarly, you can use 1x1 round bricks/plates to sit inbetween studs on
a 2x brick plate, which is pretty much the reverse of the above... It also
can create a problem, though, since the connecting plates/bricks aren't
flush with the sides of the inset surface (being rounded)
4. A little more odd, but technic beams' axle holes are typically offset by
a half stud, and also fit studs into them. There's lots of ways to make use
of that, but few are terribly useful, or take up little space :(
