Major pitfall, at least in the drawings - how do the drawers open?

Looking at your drawings, the drawers pivot open from the front outside corner.
The only way to get them to do so without hitting the center divider is to make
each drawer a quarter-circle, not rectangular.  That might not give you enough
storage space with 2 columns of drawers.  It might be better to make the drawers
full-width, alternately pivoting from each side.  Or have them all pivot from
one side, and put some shelves/stacked bins/boxes inside in the "wasted" space
behind each quarter-circle drawer.  A further advantage of having them
full-width is that you could build it such that the bottom was open, and when
all the drawers were open, you could pull the contraption over your lap, so your
legs were inside it, minimizing leaning over the table surface.

Another choice would be to have the drawers on a single slide, and that slide
pivots when fully extended, but building such a system that would be sturdy
enough would be pretty difficult.

Also, I personally would use locking metal supports for the fold-up side
surfaces, not sliding blocks. It would minimize the chances of the sides
collapsing.

It's a nice start, though - I think I might need to mess around with this idea
and take some measurements of my couch/chairs to set up the proper heights ;-)

the top of the caddy and the leaves would have a 1' lip to prevent spillage.
