Yes you can create your own help screens, make your own command icon, etc.
This is explained in detail in the "Elevator" chapter (Chapter 19) of my book
"Creative Projects with LEGO Mindstorms".

You can create your own help menu by double-clicking on its icon and selecting
Windows>Show VI Info…

The icon itself can be edited by double-clicking on the image of the icon in
the upper right hand corner of the programming window.
