I wonder how many touch sensors Soren has?  Or maybe he has some other way of
figuring out which key was pressed?

Cool. I would be nice if there would be a place for a description in the
Gallery. Both of these are excellent examples how you can make up for the
limited number of RCX sensor inputs with smart mechanical constructions.

This is pure speculation:

The typewriter seems to have a matrix of movable beams underneath the keyboard.
Pressing a key probably moves a pair of these beams to a different position.
There appear to be two movable assemblies that slide on large beams, one on the
left side, and one behind the keyboard. Note the slack in the wires leading to
the motors that move these. These assemblies probably travel back and forth,
sensing beams that have been moved by pressing a key. The RCX can then translate
the two positions and calculate the character.

The slot machine is pretty cool, too. It uses similar techniques. A light sensor
gets dragged across mechanical feedbacks for the three wheel positions. For each
wheel, there is first a white plate, then followed by a grey plate. If the wheel
is in a certain position, an arm rotates, and moves a black plate so that it
covers the grey plate.
