I have used the Berkeley MPEG-1 Video Encoder:

I used it to create a few small time-lapse movies. One was my LEGO model of
the
Kennedy Space Center crawler/transporter (the movie is near the end of the
Overview
section):

And another was a typical day on my LEGO webcam:

The program is very configurable (but that also implies a steep learning
curve).
As to adding audio to your movie, I have used free tools from
www.vcdhelp.com to
multiplex/demultiplex audio and video.
