I'll do it sometimes. Often I don't have time, so I want to move quickly.
Also, if I know I'm not going to be able to finish in one session, I'll need to
be able to put everything away neatly. Which is another advantage of leaving
everything in the bags.
Doing a complete sort is good for my sons, because they can handle sorting the
pieces and they can handle building the model from the sorted pieces. But they
often get frustrated looking for pieces when the parts are in one big pile.
