There's no one place, but there are some references out there:

For older figures, approximately up to 1997, many are shown by theme
and subtheme on the Fibblesnork Guide at:

http://www.lugnet.com/fibblesnork/lego/guide/

Fibblesnork guide has scans of actual figures.

Brickset at http://huw.brinkster.net/ has many figures shown
from instruction illustrations.  This limits it somewhat, since
you can't see heads inside helmets or torsos under armor.

My own site, Locker 99 at

http://home.att.net/~locker99/index.htm

has many figures from 1997 forward, shown both with and without
armor, helmets, etc., to make it easy to match heads with torsos.

By the way, Classic Star wars Dark Side figures are now done on
Locker 99 at

http://home.att.net/~locker99/starwars/clasdark.htm

Just don't try to go beyond the Dark Side, because although the links
are written into the pages, I haven't posted all the other Star Wars
figures yet!
