When I build these 'Mechs (thus far at least), I build them for gaming at cons
and such where I want anyone to be able to use them.  It's still possible to
build Mechs with rotating hips... the geometry of mounting them to the 8x8 plate
gets a little tricky but it is possible; I did it with non-modular mechs at a
slightly smaller scale, and I'm sure it's possible (especially for someone more
fluent in Mech) with the modular setup too.

I don't know how sturdy they'd be, but if someone were building a Mech for his
own play, for instance, that wouldn't be much of a concern.

Also note that while these two have big feet (basically maxed-out) with a Mech
with smaller feet you can put them in two positions and add interest to a pose.
A lot of my photos don't show this because I figured it out after shooting the
initial batch, but here are a couple examples:
