Kent,
I would cover your model in aluminum foil to make it highly reflective.
From what I understand, a light-activated proximity sensor "looks" for a
change in the light around it. Thus to be undetectable, make your model as
bright as the background, even when close to the opponent. Note: if the
sensor is actually looking for a dip (as opposed to ANY change) then such a
set up may actually trigger a proximity alarm when your vehicle moves away -
with the resulting humorous too-late effort of the opponent.
An alternate application of the above would be to shine a bright light at
the opponents sensor. This would "blind" the sensor to changes. This method
is used in modern warfare to overload receiving stations. I don't know if
Lego robotics has a light source bright enough though.
You could also "spoof" the opponent. Put a light source on a long
retractable arm. The opponent would then see the arm moving instead of your
vehicle. I visualize a bull fighting matador with the oppenent always
chasing your "cape".
The stealth method mentioned previously is for an active sensor. The angles
& materials deflect/absorb the energy emitted so the reflection received by
the opponent is reduced. The energy received by a light sensor is passive.
Making your model reflect less energy may make it easier to detect.
These are just my ideas. Since you have a light sensor there, it would be
easy to test any modifications.
