Good question!

(To everyone) Do you keep models built until you have no choice but to tear
them down for parts, or do you treat them like models - they're built and
stay built and work around that to make new creations?

Build, photograph and tear down to build anew.

Build, photograph and keep it built till the parts are needed?

You left out:

Build, copy with improvements using another set of pieces, cycle till you
are happy, then keep the final iteration together "indefinitely"

That's me. I have everything I've ever built that was any good (and some
stuff that isn't all that great) still together. But I'm running out of space.

Hehe.. that's cool. Though that does require the procurement of more bricks.
Something that is a bit costly to me.

Right now I'm in the "hey... I've been acquiring bricks for the last 3 years
and now that I have space to build, let's see just how many things I can
assemble before all the 'good' parts are used up." Surprisingly (or not),
I've found I still haven't found that point, yet.. though the pieces I
.want. to use are mostly used up now.. :)
