I designed a similar roof for my macrofig-scale cottage project. If you use a
45-degree pitch you should be able to finish the side edge of the peak with
virtually no gap using one 1x2 plate on the underside of the 1-by's on one edge.
There'll be a bit that hangs down, but it'll look decorative.
