John,
A sort of off-beat challenge would be to build the "strip-chart/EEG"
model, the last one in the 8888 idea book. It's one of my favorites
and it starts at

and goes for 3 or so pages.
Alternatively, the mechanically programmable crane just before is a
fun model also.
